The specialists, who has dedicated themselves to the art of recognizing and estimate the high quality wine, may speak with hours about that French name, when describe the specific characteristics, which a geographic region gives to the wine. Some sources give another translation – “feeling a place”, and the connoisseurs inset that the “terroir” is combination from all details, “which forms the character of a wine – geographic region, climate, soil, exposition of the vineyard (on hill, in valley), waters and even such details like character and mentality of the people, who live in the region, cultural peculiarities, way of threating the ground and the wine produced etc.”.
The producers of high quality wines claim, that local “terroir” gives the best wine. But if we trust the other translation for “feeling a place”, garnished with solid aroma of ancient legends, a pinch of mystic and nuance of inscrutability – of course “the place” is in Northwest Bulgaria. The production of high quality wine here is an ages long tradition, which the professionals recover successfully and offer to the tourists on of the best destinations for wine tourism. The soil, the favorable climate and masterful of the winemakers in the Northwest part of Bulgaria are just few of the unique preconditions for growing local and international grape varieties and production of high quality wine. According to specialists’ opinion in that region of Bulgaria there are still many unobserved microarrays, which promise to become “terroir” of new magic series Bulgarian wine.
Chateau Burgozone
The vineyards of Chateau Burgozone take area of 100 hectares, located in unique for growing grapes terroir on the scarp of the south coast of Danube river nearby Oryahovo town in Bulgaria. Its altitude is between 130 and 180m above the sea level. The winery is located amidst its vineyards, which from wine production point of view is undeniable advantage, as the timely grape processing, immediately after its harvest does not allow any changes of its characteristics. The building, which is original architecture combination of winery and boutique hotel, is designed and built on the scarp of the south coast of Danube river and to have optimal temperature for storage the wines, the cellars are located two floors under the ground level. Within the vineyards have had discovered remains of the ancient Roman fortress Burgozone, gave the name of the winery. Multiple parts of ceramic vessels can be seen at the local history museum. The fortress had been located on the ancient road, connecting Belgrad with Constantinople and had been defending the Roman Empire from the barbaric raids beyond Danube river. Magurata – a modern winery in millennial cave
Part of Magurata cave – The Bats’ gallery is converted to place for aging precisely chosen wines from decades. The winery is equipped with the most modern technology for wine producing. The experts have concluded, that the area around the Rabisha mound by soil and climate conditions is very close to the French province of Champagne and here are produced some of the best natural sparkling wines by classic technology. The wine is aging and slowly matures in the deep underground of the cave. The permanent temperature of 12C, the darkness and permanent air humidity create great conditions for naturally sparkling – by traditional boutique technology with three years of aging. Old-fashioned wines of Borovitsa winery
Borovitsa winery is nestled among the Belogradchik rocks and produces limited lots of wine, which already won as the experts, as an amount of awards. Part of the vineyards of the winery are located just under the Belogradchik rocks and grow on the unique sandy-stony soil. It produces over 25 kinds of unique wines, all in very limited quantities – between 250 and 400 bottles.
